Spicy Turkey Burger with Avocado
Yield: 4 Sandwiches


4 fresh turkey burgers
1 cup pico de gallo
2 teaspoons chipotle chili powder
8 slices Monterey jack cheese
1 large avocado, sliced 1/4 inch
3 tablespoons fresh cilantro leaves, minced
4 Kaiser rolls

Pico De Gallo Salsa

1 teaspoon lime juice
1/2 cup tomatoes, diced 1/4 inch
2 tablespoons yellow onion, diced 1/4 inch
2 tablespoons green pepper, diced 1/4 inch
1 teaspoon jalapeno pepper
1 teaspoon cilantro leaves, chopped
1/8 teaspoon kosher salt
1/8 teaspoon ground black pepper


Pico de Gallo Salsa: Combine all ingredients. Mix well.

For Service: Preheat grill to medium high. Grill turkey burgers for approximately 18-20 minutes, sprinkle 1/2 teaspoon chipotle chili powder on each burger, turning once during cooking. Top each patty with 2 slices of cheese and allow to melt. Toast Kaiser roll. Spread 1/4 cup pico de gallo on heel of toasted roll. Place turkey burger with melted cheese on top of pico. Place 3 slices avocado on top of burger. Top avocado with 1/2 teaspoon cilantro. Close sandwich with crown of toasted roll.
