Roasted Irish Salmon
Makes 4 servings
3 Tbsp. honey
3 Tbsp. Irish whiskey
1 Tbsp. fresh lemon juice
1 Tbsp. white vinegar
1 Tbsp. canola oil
1 tsp. chopped fresh thyme leaves
4 salmon fillets (about 4 ounces each)
  1. Mix honey, whiskey, lemon juice, vinegar, oil and thyme until well-blended. Place salmon in large resealable plastic bag or glass dish. Add honey mixture; turn to coat well. Refrigerate up to 2 hours to marinate.
  2. Preheat grill to medium heat. Remove salmon from marinade. Discard any remaining marinade.
  3. Grill salmon 5 minutes on each side or until salmon flakes easily with fork.
