Makes 5 servings

2 Tbsp. olive oil
1 small green pepper, chopped
1 small sweet red or yellow pepper, chopped
1/2 cup chopped onion
2 cans (15 oz. each) black beans, rinsed and drained
1 can (14-1/2 oz.) diced tomatoes, undrained
2 Tbsp. cider vinegar
1/2 tsp. garlic salt
1/8 tsp. cayenne pepper or to taste
2-1/2 cups hot cooked brown rice

  1. Heat oil in large saucepan on medium-high heat. Ad peppers and onions; sauté about 5 minutes or until tender.
  2. Stir in beans, tomatoes, vinegar, garlic salt and cayenne pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 12 to 15 minutes or until desired consistency, stirring occasionally.
  3. Serve over rice.
