Blackened Catfish and Sofrito Black Beans
Makes 4 servings
Sofrito Black Beans (recipe below)
2 tsp. garlic powder
2 tsp. dried thyme leaves
2 tsp. paprika
1/2 tsp. ground red (cayenne) pepper
1/2 tsp. ground black pepper
4 catfish fillets (about 1 pound)
  1. Prepare Sofrito Black Beans as directed in recipe.
  2. Mix all of the spices in a bowl. Generously sprinkle spice mixture on both sides of the fish. Discard any remaining spice mixture.
  3. Heat oil in large skillet on medium-high heat. Add fish; cook 4 minutes on each side or until fish flakes easily with a fork.
  4. Spoon Sofrito Black Beans over fish. Serve immediately.

Sofrito Black Beans:
Makes 4 servings

1 Tbsp. canola oil
1/4 cup chopped onion
1/4 cup each chopped green bell pepper and red bell pepper
2 tsp. minced garlic
1 can (15 oz.) black beans, rinsed and drained (about 1 cup)
3 Tbsp. water
2 tsp. chopped fresh cilantro
1/8 tsp. ground black pepper

  1. Heat oil in large skillet on medium heat. Add onion, bell peppers and garlic; cook and stir 5 minutes or until tender.
  2. Stir in beans, water, cilantro and ground pepper; cook and stir 10 minutes or until heated through. Keep warm while cooking catfish.
