Peanut Chicken Stew
Serves 8-10


2 tablespoons butter
1 tablespoon molasses
1 teaspoon cinnamon
1/4 teaspoon nutmeg
Pinch of salt
4 cups butternut squash, diced 1/4"
3 cups pear, diced 1/4"
2 cups apple, diced 1/4"
1 cup fresh cranberries or frozen if fresh is not available


Melt butter. Add molasses and spices. In large bowl toss fruit and butternut with butter mixture. Place on treated sheet pan and roast at 350 for 40-50 minutes. Stir at least twice during cooking. Vegetables and fruit should be fork tender. Remove from oven and place in serving dish. Serve warm.
